Lime & Lemon Slice

Get a burst of tangy lime and lemon all in one delectable and easy to make lime & lemon slice. Great for afternoon tea or to cleanse the pallet after dinner.


Use:
60g butter
250g sweetened condensed milk
250g packet of plain sweet biscuits
1 cup desiccated coconut
1 tablespoon fresh lemon juice
2 tablespoons Baker Halls & Co.’s Lime Fruit Syrup
Grated zest of one lemon
Icing sugar for dusting


Make:
Line a slice pan with baking paper.
Finely crush biscuits then stir in the coconut and lemon zest until well mixed.
Place the butter and condensed milk into a saucepan over a low heat, stirring occasionally. When the butter is melted and the mixture is smooth, remove from heat and stir in the lemon juice and lime fruit syrup.
Add the mix to the dry ingredients and combine thoroughly.
Press the mixture into the prepared pan and smooth firmly using a small roller. Refrigerate until set and then dust with icing sugar before cutting into squares.
